Sarabande Press Release March 2018

At Domaine la Sarabande we are focussed on creating our highly acclaimed red wines in the Vineyards. The terroir of our Appellation is unique because the schist soils are extremely ancient in the southern French region of Faugères. The schist is mixed with a percentage of limestone which makes these 350 million year old soils so special. There is also a mix of clay and sandstone which combine to form a well-drained, adequately fertile and perfect terroir. This is land that makes the vines struggle to produce lovely balanced fruit. As a winemaker the goal is to receive fruit that has reached maturity, with optimal flavour and sugar ripeness, along with a balanced acidity. Year upon year our vineyards have given us this balance.

In 2013 we purchased our Les Rabasses vineyards that lend its name to our main Faugères blend. These vines possess a vitality that can only come from the stony soils. This vitality lends electricity to our wines. The vineyards were planted in the early 1990’s on an ancient plot called ‘Bousigue’. Soils that are ideal for growing the Languedoc varietals Grenache, Syrah and Mourvèdre.   

We are extremely happy to announce the new release of the following wines from these vineyards. These single vineyard wines have been blended so that they express the individuality of this very special AOP that is Faugères.
2016 Domaine la Sarabande Bousigue
This Mourvédre vineyard is trained as bush vines. We restrict the yield from these vines as the soils will only give up small quantities of water and nutrients. The vines sit on a south facing slope which is well drained. This is particularly important for the notoriously late ripening Mourvedre variety. Our entire harvest is picked by hand when we taste the flavours that we desire. All of our fermentations take place in micro fermenters. We add no yeast so the ferments are completely natural.
This wine is only produced in the finest years and only 650 bottles are made. It is a blend of 80% Mourvédre and 20% Syrah. The wine is deep in colour with some lovely brambly nuances to the aroma. Wild thyme and dried meat characters are also present that are also on the palate which is rich and mouth filling with an exceptional soft and long finish. Best served with chicken, wild bird or BBQ meats.
2015 Domaine la Sarabande Les Rabasses
It is typical for domaines in the Languedoc to produce a wine that will be called ‘Tradition’. This is always blended and exhibits a typicity for the appellations from where they are produced. This is our take on the style. This wine is 54% Syrah, 28% Mourvèdre and 18% Grenache. The Syrah has a ripe spice and freshness that is complimented by the meaty, bloody funkiness of the Mourvèdre. The Grenache rounds the wine off with some stunning ripe cherry characters.
This wine is matured in large format 500L barrels for up to 14 months. The wines are then blended and bottled without filtration or fining. The schist soils mark this wine with deep, powerful and balanced fruit. It offers a deep, rich bouquet of cassis, blackcurrants, blueberries, graphite and crushed rocks. Rich, fruit forward, concentrated and beautifully textured, it’s an Old-World fruit bomb to drink over the coming 3-5 years.
